I have successfully installed both X11 and XDarwin and am now doenloading ooo103... again as the first attempt 'unexpectedly quit' when I started it.
Do I need to start either XDarwin of X11 or both prior to starting OOo, or is their another problem I am missing?

No, if you've already got X11/XFree86 installed before installing OOo then you should be fine. The installer should skip over the X11 install portion.
What you may need to do is point Start Openoffice.org to the correct X server location the first time you start it up. The 'auto-directing' of Start OOo only functions when the OOo installer is putting X11 on the system. The first time you start up you'll see a dialog like "Where is XDarwin?". If you need to change your server, you can find it under "Start OpenOffice.org > Preferences".

OOo is not giving me the chancce to redirect it to Xdarwin, it just 'unexpectedly quits' every time. WOuld I be better off uninstalling X11 and Xdarwin and OOo and starting from scratch? or is there an easier way.

Exactly what crashed? Start OOo, or soffice.bin?
Open Console (Applications > Utilities > Console) and go to File > Open Log...
Navigate to your home directory/Library/Logs/CrashReporter and look for a file from "soffice.bin" or "Start OpenOffice.org". Open it, and paste the last section of the file into a post. You need to get from the closest "********" to the end of the file. See this OOoDocs thread for an example of what content we need from the crashlog.

Hmm...I notice you're running build 6C115 (10.2.0). Terry...when did AppleScript Studio support get into the OS? My recommendation would be to try updating to at least 10.2.3 and see if that fixes the problem. I'll look through the update history and see, but you may be hitting against a bug that was fixed with one of the 10.2 "point" updates to AppleScript. I've only actively tested on 10.2.6, and very briefly on 10.2.3, never on anything older.
As an alternative, you can try the Terminal launching instructions contained in the README until we can figure out how to get Start OOo working on your box. Don't forget to leave off the /usr/X11R6/lib if you're using Apple X11!

As Ed correctly surmized, the "Start OpenOffice.org" application itself is crashing (probably before any of OOo is running). AppleScript Studio was fairly buggy in Mac OS X 10.1.x, and that was the area I had most problems wiith, but Mac OS X 10.2.0 had AppleScript Studio v1.2, which is where things got a lot better. Mac OS X 10.2.3 has AppleScript Studio v1.3.
I too did most of my testing against Mac OS X 10.2.3 and 10.2.6 (and Mac OS X 10.1.5).
If I get time, I will try testing with Mac OS X 10.2.0. But you should follow Ed's advice.
