The combination of command with the left or right arrow to jump to the end of a table doesn't work any more in calc. |

But, interestingly, Cmd-Shift with left or right arrow does jump to the left or right side of a spreadsheet and selects the intervening cells (NO 3.0 Patch 5) |

I have some bad news, what you are seeing is the fix for this bug.
Prior to NeoOffice 3.0 Patch 5, NeoOffice failed to handle all of the Mac OS X standard key actions that OpenOffice.org 3.0.1 supports. Since Mac OS X defines Command-arrow as move to the beginning/end of a line, this is now the behavior that you are seeing.
Since the OpenOffice.org code gives priority to Mac OS X standard key actions over the shortcuts set in the Tools :: Configure menu's dialog, the only workaround is to assign the Command-arrow shortcuts to a different set of keys.

Here's the steps to assign the old Command-arrow behavior to a new set of keys:
1. Select the Tools :: Customize menu and click on the Keyboard tab.
2. Select the Calc radio button, select Navigate in the Category list, and select "To Left Block Margin" in the Function list
3. Select an unused key shortcut (I used Command-Shift-N) in the Shortcut Keys list
4. Press the Modify button and press the OK button to make your new shortcut active
5. Repeat the above steps except in step 2, select "To Right Block Margin" in the Function list

I have good news: I think that I have found a way to make Command-right arrow and Command-left arrow work in Calc.
I have posted a NeoOffice 3.0.1 Early Access test patch that fixes this problem in this post.
Does that test patch work for you?
