Is there a way to turn this auto feature off, and do it manually? For the entire page. |

Yes, go to Format > AutoFormat and uncheck While Typing.
I "hate" this automatic formatting

Try going to the Tools Menu, choosing AutoCorrect, selecting the "Options" tab and unchecking Apply Number - symbol:.
I'm not entirely certain that this will turn it off, but it is worth a try.
Also, if you want all autoformatting turned off, you can go to the Format menu, choose Autoformat and make sure all three options (or at least While Typing) is turned off.

I hate autoformatting too... but I prefer to use tools/autoformatting because when you turn off the "whyle typing...", the typographical quotes are lost! «...» |

You should get the typographical quotes on the keyboard. On the French keyboard there are key combinations: Opt-è and Opt-Shift-è. You have something like that on the spanish keyboard. Open the Keyboard Viewer, I believe that Opt-3 and Opt-Shift-3 (3 on the keyboard, not on the numeric keypad) work.
So you can turn off the autoformatting and have the typographical quotes
