when using speadsheet and entering url's and email addresses, i have noticed that once i carriage return out of that cell, the link is active and i cannot figure out how to edit it. i did some searches on here for this issue and couldn't find anything. it might be hard to find due it being an odd issue.

any help out there?

Select the cell (it's possible, for example by selecting one cell on the right side, then one on the left side, while you press the Shift key). Then go to the Format menu and click on Default Formatting.

There is a page in NeoWiki about Formatting Hyperlinks which can help to insert hyperlinks in Writer and in Calc.
