Patrick passed this tip along for me so I figured I'd post it here too (yes, I'm compiling NeoJ and hoping to get up to no good...)
Use:

make OO_CVSROOT=:pserver:blah
|
where :pserver:blah is replaced by the CVSROOT that you want to use. Since the OOo anoncvs tends to go braindead about, oh, half the time I've ever tried to use it this is a cool trick  Thanks patrick!
