I know that OOo now comes with its own uninstaller but this does not remove dlcompat, GhostScript and fondu.

I have been unable to find clear documentation concerning the complete removal of these programs, can anybody help with this?

You'll really need to poke around to find full uninstalls. In general, fondu is easy...just remove /usr/local/bin/fondu. Ghostscript is more complex. If you're looking at the install list from other operating systems you can't remove everything since OS X needs the cups system for its own printing. It's probably best to leave it alone. X11 is mostly isolated in the /usr/X11 and /etc/X11 directories and the XDarwin or Utilities/X11.app applications inside of /Applications.
