How exactly does NeoOffice/J work? You just remove all the X11 GUI related stuff from the OO project and insert a Java GUI?

Roughly, yes. OOo has an abstract drawing layer called "VCL" that, in OOo, has implementations for X11 and Windows GDI. Patrick managed to replace it with a mixture of Java and Carbon...not an easy task at all. It's still specific to Mac OS X as the windowing system isn't pure Java and the 98% of the OOo code that's not related to VCL is still all C++.

You can do a search around here in the forums for more information or you can look for some of my various presentations from the O'Reilly conferences for more details.
