I have an Excel document which I associate with NeoOffice/J. When I double-click, it opens with writer and not with math. I was lgoing via extra/options/load/save/ Microsoft office and there I associate excel files with NeoOffice.
It still opens with writer instead of with math.

It's possible that the document is corrupted beyond readability or is a version of an Excel file that is not supported (see this page in the wiki with the list of Excel formats and versions). Also, I discovered recently that Mac .xlw files don't seem to be supported, as for some reason they're not equivalent to the Win .xlw versions, unlike .xls and.xlt formats.
You might try opening it/inserting it into an new Calc document and see if that makes a difference, but it's hard to say for certain what the problem is without knowing more about the file and what version of Excel saved it.
As for the Content-Type, for .sxc docments, it's application/vnd.sun.xml.calc and for .stc (calc templates), it's application/vnd.sun.xml.calc.template.
