Is there a way to configure not just an OpenOffice Start icon on your desktop or taskbar (whatever it's called), but better yet, an icon for opening Writer and Calc, separately?

I don't believe that Start OOo comes with source code, so you'll need to roll your own launcher to get four different ones. One trick that may help is to create and save four blank document templates for each different 'app'. Drag all four templates into the dock (or wherever). When you click on a template document to open it, Start OpenOffice.org should then launch OOo showing a blank document of the appropriate type.

If you're using the Applications menu of Apple X11, you can simply create multiple entries in the menu substituting "soffice" with "sdraw", "swriter", "scalc", or "simpress" for the different document types. There's also an "sweb" that will start Writer with the HTML stylesheet set.

It does come with source in the form of AppleScripts you can edit.

While I don't see the need to create different launching applications for different kinds of OOo documents, if you really want to do it, make multiple copies of the "Start OpenOffice.org" application, and edit the "application.script" of each copy, with an AppleScript editor. There is a "property" defined at the top of the file that speciifies the default OOo program to launch - change as appropriate in each copy.
