I don't know how to do this with OOo X11, but with Neo/J (a non-X11 version of OOo) will automatically open when double-clicking on OOo files from the Finder or Mail.
Because OpenOffice.org is not a "proper" Mac application like NeoOffice/J, you will need to manually set all of the document types you wish to open in OOo to open via your "OOo starter app" (usually Start OpenOffice.org or Begin OOo).
Select a document of one of the types, i.e., foo.sxw, in the Finder and do File>Get Info (cmd-I). Click on the disclosure triangle next to "Open with:" to expand that section. Choose the appropriate launcher application from the drop-down list (if the app is not listed, select "other" and navigate to the app). Finally, click the "Change All" button and "OK" in the resulting dialogue.
Repeat these steps for each additional document type you want to open in OOo (.sxi, .sxc, .sxd, etc.).
Or try NeoOffice/J instead

Thanks answering me! In fact I didn't know NeoOffice/J! I have already install it and OOo works really really better with it!! I can forget X11.
