I know I read about this somewhere here, or on Bugzilla, but I'm blowed if I can find it. Anyway it's* happened to me now, so if someone could point me in the right direction I'll help test the fixes.
* "it" is a PDF Export window with three empty tabs along the top of the window and lots of text missing - but not all of it - and all the buttons where they should be.

If the issue is with OOo's PDF export feature, you can try to "Save as PDF" from the print dialog. Maybe you won't experience the same issue if you use Mac OS X's built-in export filters.
